Technical background: PDF metadata

PDF files contain metadata on two different levels: Firstly, the information is stored in the Info Dictionary as key-value pairs; secondly, there is the XMP package area, which contains structured data in XML format. The first area, in particular, can also store values with a version history, so that changing a value does not delete the previous value! Even if you only see the changed value, this does not mean that traces of the old value don't still exist somewhere deep within the PDF file's history.
